Recipe of the Week: Kale Pizza

Kale is a much under loved winter vegetable. When prepared correctly kale is delicious and very nutritious. Kale is part of the cabbage family, with leaf colors ranging from light green to dark green, and violet to violet-brown.  Kale can be grown well into winter and actually has a sweeter taste once exposed to a frost.

Kale is high in vitamin K and C, beta carotene, lutein, zeaxanthin, contains omega-3 and calcium. It’s delicious boiled, sautéed, stir fried, and makes a great pizza topping.  In fact, homemade pizza with kale is one of my favorite foods. Try out this simple recipe for Kale Pizza tonight.

Kale Pizza

Pizza dough. (I get mine already made at the local pizzeria, most pizza shops will sell you a ball of dough for a couple bucks. You can also make it, check out this recipe for Really Simple Pizza Dough from smitten kitchen)
Pizza Sauce – recipe below
3-4 stems of kale, chopped
4 cloves minced garlic
2 cups low-moisture mozzarella, shredded
½ cup onion, thinly sliced
½ cup bell pepper, thinly sliced (any color)
5 strips of bacon, cooked and chopped (optional)

Place pizza stone on middle rack in cold oven and pre-heat to 425°. Once pre-heated let pizza stone cook for 15-20 minutes. You can also use a baking sheet turned upside down and covered with parchment paper.

Roll out pizza dough onto a corn meal dusted surface (I use a large cutting board or cookie sheet). Spread desired amount of pizza sauce on dough and then sprinkle with half the cheese. Add onions, bell pepper, and bacon. The bacon is optional but you will not regret adding it, it elevates this pizza from great to amazing. Next add the kale and garlic. Finally top with the rest of the cheese.

Slide the pizza onto the stone or baking sheet. Bake for 10-12 minutes until the crust is golden brown and the cheese is completely melted. Let rest for 5-10 minutes before cutting and devouring.

Pizza Sauce

1 can tomato puree (if you can’t find puree you can use a 4-ounce can of tomato paste that has been thinned down with a ½ cup of water)
2 cloves garlic, minced
1 teaspoon red pepper flakes
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh parsley
Salt and pepper

Mix all ingredients together and then let sit for at least an hour. (In a hurry? Use dried herbs and you can use immediately.)
