Recipe of the Week: Garlicky Guacamole

I love avocados. Sliced on a burger, salad, or made in to delicious guacamole! Avocados contain all 13 essential vitamins the body needs and are good sources of folic acid, fiber, potassium and monounsaturated fat (which helps lower blood cholesterol), so there is no need to feel guilty when you dig into this dip. Here is a simple and delicious recipe for this green goodness. Enjoy!

Avocados are a fruit not a vegetable, and are sodium and cholesterol-free.

Garlicky Guacamole

2 avocados
Juice of 1 lime
4 cloves of garlic, finely chopped
¼ cup red onion, finely chopped
Salt and Pepper to taste

Slice avocados in half lengthwise by cutting into the avocado and running knife around pit. Just twist the 2 halves and it should come right apart. Spoon out the pit. Using a spoon, scoop out the meat of the avocados and place in a bowl. Mash avocado with fork or potato masher. Add lime juice, garlic, onion, salt and pepper. Mix well. Serve immediately with tortilla chips.

*To keep leftovers from turning brown, press plastic wrap onto surface of dip making sure there are no air bubbles and store in refrigerator.
